Granola Bars/Energy Bars

I wanted to share one of my favourite granola bar recipes with you. My kids love them and they are so healthy and most importantly you know what's gone in to them. They are even great for breakfast if you are on the run. I have been known to break them up and pour almond milk on them for the kids in the morning! Shh our secret...

As many of you know I do not eat dairy, gluten or refined sugars, so this recipe works out great and has loads of taste.

1 tbsp olive oil or coconut oil+ more for pan
3/4 cup of spelt, buckwheat, rice or alternative grain flour
3/4 cup of rolled oats
1/2 cup of dried cherries (try to get the ones not sweetened with sugar)
1/4 cup ground flaxseed
2 tbsp coarsely chopped almonds or pepitas (pumpkin seeds)
1/4 cup coarsely chopped cashews
1/4 tsp salt
1/2 cup honey
1/4 cup natural creamy nut butter (almond, peanut or cashew)
1/2 tsp pure vanilla extract

Preheat oven to 325 degrees
Brush an 8x8 baking dish with extra oil.

1. In a bowl combine dry ingredients. 

2. In a small saucepan, combine honey, nut butter, oil and vanilla. Cook over med. heat until melted. Add this to the dry ingredients and mix.

Place mixture in baking dish, smooth out. Bake until golden & edges pull away from dish.
20-25 minutes. Cool in pan. Cut bars and store in an airtight container. Bars last a week.
