Homemade Granola
Here is my favourite Homemade Granola recipe. It is so tasty that I tend to just snack on it. It's a great energy food and full of protein! A friend of mine has been asking me for this recipe for some time, so here it is.
New Granola
Servings: 6
2 C Old Fashioned rolled oats
1C Sunflower Seeds
½ C Cashews
1/3 C Frozen apple juice from concentrate, thawed
2 tbsp Maple Syrup
1tbsp ground cinnamon
1 C unsweetened shredded coconut
1/2C Dried sour cherries or raisins
Preheat oven to 300F. Combine oats ,cashews and sunflower seeds in bowl. Mix in juice concentrate. Add maple syrup and cinnamon and toss. Spread on cookie sheet.
Bake 25 minutes, stirring occasionally. Stir in coconut and bake until golden, about 15 minutes. Remove from the oven, cool.
Add cherries and raisins (if using) to granola. Store in Airtight container at room temperature. (Can be made 1 week ahead). Serve with fresh fruit / milk or eat dry as a yummy snack.

I'm a hard core granola maker myself - this recipe is similar to mine! One thing I do differently is instead of apple juice concentrate, I use blackstrap molasses (the black goo that's good for you), honey and peanut butter as my 'binder'.
Yum.
Could you give me your granola recipe with the black strap molasses in it?
Yum, that sounds delicious with the blackstrap molasses!
